Transcribing a piece of music means that you work out by ear how to play along exactly with that piece of music.
All your favourite musicians from Steve Vai to John Frusciante to Jimmy Page to Victor Wooten have spent hours and hours transcribing. Transcribing gave them a firm foundation in the musical language of their favourite artists and from there they built up their own musical identity.
As you transcribe music, you not only learn the piece of music but you pick up all sorts of other stuff along the way - rhythm, note choices, phrasing, how to contruct a solo/rhythm part/bassline/drum fill etc. In fact, transcribing is one of the most important skills that any musician can have.
When transcribing, it can be very helpful to be able to slow down pieces of music, change the EQ to favour the sound of the instrument you are trying to hear, loop small sections and adjust pitch for out of tune recordings.
